Pancake-Palooza

Patti Soskin’s Potato Pancakes

6 russet potatoes
1 onion
2 eggs
2 tsp. salt
1/2 c. flour
Vegetable oil for frying

Peel the potatoes and soak them in cold water for 30 minutes, then rinse and dry. Dice the potatoes and onions, and chop finely in a food processor with a metal blade. In a bowl, combine the potato/onion mixture with eggs, salt and flour. Mix by hand. Heat oil in a non-stick pan, and drop in spoonfuls of pancake mix. Flip pancakes when the edges are brown, and remove from the pan when both sides are crisp. Place pancakes on a paper towel to drain, and add salt to taste. Enjoy!
